  • 1 ½ cups long grain white rice (uncooked)
  • 3 cups water
  • 1 chicken breast (boneless & skinless, cut in ½-in cubes)
  • 1 ½ tsp salt (divided)
  • 1 tsp black pepper (freshly cracked & divided)
  • 1 tbsp olive oil
  • 1 yellow onion (small dice)
  • 3 carrots (peeled, small dice)
  • 3 tbsp butter

Method
 

  1. Preheat the oven to 350°F and spray an 8x10 casserole dish with cooking spray.
  2. Cook the rice according to the package instructions to yield 4 cups of cooked rice.
  3. Cut the chicken into ½-inch cubes and season with ½ tsp salt and ½ tsp pepper.
  4. Heat a large skillet over medium-high heat, add olive oil, and sear the chicken for about 2 minutes per side until lightly browned.
  5. Add diced onion and carrots to the skillet, sauté until softened, about 5 minutes.
  6. Combine cooked rice, chicken, and sautéed veggies in a bowl, mix well, and transfer to the casserole dish.
  7. Dot the top with butter, cover with foil, and bake for 30 minutes.
