Ingredients
  

  • 2 cups enchilada sauce
  • 3 cups shredded chicken
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp salt
  • 4 oz diced green chilies
  • 8 flour tortillas
  • 2 ½ cups shredded Mexican cheese

Method
 

  1. Prepare your enchilada sauce or open your store-bought sauce. Shred the cooked chicken.
  2. In a large bowl, combine the shredded chicken with cumin, garlic powder, and salt. Mix well.
  3. Add the diced green chilies and ¾ cup of shredded Mexican cheese to the chicken mixture. Stir to combine.
  4. Preheat your oven to 350°F (175°C). Gently warm the flour tortillas in the microwave or a dry skillet until pliable.
  5. Spread ½ cup of enchilada sauce evenly over the bottom of a 9x13-inch baking dish.
  6. Fill each warmed tortilla with about ½ cup of the chicken mixture. Roll them up tightly and place them seam-side down in the prepared baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well-covered. Sprinkle the remaining 1 ¾ cups of shredded cheese on top.
  8. Bake for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and golden brown.

Notes

- Use rotisserie chicken for an even quicker prep time.
- Don't overfill the tortillas, or they'll be difficult to roll.
- For extra flavor, warm the tortillas slightly before filling.
