Creamy Chicken Fajita Pasta

Ingredients
  

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1 tbsp cooking oil
  • 1 boneless skinless chicken breast

Method
 

  1. Combine the chili powder, smoked paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, and salt in a small bowl.
  2. Dice one medium onion and one bell pepper. Cut the chicken breast into 1/2-inch cubes.
  3. Bring a large pot of water to a rolling boil for the pasta.
  4. Add 12 oz of your favorite pasta to the boiling water. Cook for 7-10 minutes, or until al dente.
  5. Heat 1 Tbsp cooking oil in a large skillet over medium heat. Add the cubed chicken and half of the fajita spice mix. Sauté until cooked through, about 5-7 minutes.
  6. Add the diced onion and bell pepper to the skillet. Sauté for 3-5 minutes until they begin to soften.
  7. Stir in the remaining fajita spice mix, 1 can of diced tomatoes, and 4 oz of cream cheese. Cook until the cream cheese melts.
  8. Add the cooked chicken and drained pasta back into the skillet. Stir until well combined.
