Method
- Combine the chili powder, smoked paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, and salt in a small bowl.
- Dice one medium onion and one bell pepper. Cut the chicken breast into 1/2-inch cubes.
- Bring a large pot of water to a rolling boil for the pasta.
- Add 12 oz of your favorite pasta to the boiling water. Cook for 7-10 minutes, or until al dente.
- Heat 1 Tbsp cooking oil in a large skillet over medium heat. Add the cubed chicken and half of the fajita spice mix. Sauté until cooked through, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet. Sauté for 3-5 minutes until they begin to soften.
- Stir in the remaining fajita spice mix, 1 can of diced tomatoes, and 4 oz of cream cheese. Cook until the cream cheese melts.
- Add the cooked chicken and drained pasta back into the skillet. Stir until well combined.
