  • 1 cup plain breadcrumbs (115g)
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • 2 tbsp neutral oil
  • cup Greek Yogurt (80g)
  • 3 tbsp water
  • 1 chicken breast (boneless, skinless, about 2/3 lb., 302g)

Method
 

  1. Preheat oven to 425ºF (220ºC). Line a baking sheet with parchment paper and place a wire rack on top.
  2. In a wide, shallow bowl, combine breadcrumbs, garlic powder, smoked paprika, salt, and black pepper. Stir well. Drizzle the neutral oil over the breadcrumb mixture and stir until evenly coated.
  3. In a separate small bowl, whisk together Greek yogurt and water until smooth.
  4. Trim any excess fat from the chicken breast. Cut the chicken into bite-sized pieces.
  5. Toss the chicken pieces in the Greek yogurt mixture until well coated.
  6. Dredge the yogurt-coated chicken pieces in the seasoned breadcrumbs, ensuring each piece is fully covered.
  7. Arrange the breaded chicken nuggets in a single layer on the prepared wire rack.
  8. Bake for 18-22 minutes, flipping halfway through, until golden brown and cooked through.
