Ingredients
  

  • 2 tbsp cooking oil (divided)
  • 1 lb chicken thighs (boneless & skinless, cut into bite-size pieces)
  • ½ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • 8 oz white mushrooms (sliced)
  • 1 cup onion (diced)
  • 2 garlic cloves (minced)
  • 1 ½ cups chicken broth
  • ½ cup whole milk
  • ½ tsp dried thyme

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Heat 1 Tbsp oil in a large skillet over medium heat. Cook chicken until golden brown, about 6 minutes.
  3. Remove chicken and add remaining oil, mushrooms, onion, and garlic. Cook for 5 minutes until softened.
  4. Pour in chicken broth, milk, and thyme. Bring to a gentle simmer.
  5. Return chicken to skillet and stir to combine.
  6. Top with biscuit dough and bake for 20-25 minutes until biscuits are golden.

- Ensure your chicken is cut into uniform bite-sized pieces for even cooking.
