  • 2 boneless, skinless chicken breasts

  • 2 tbsp butter
  • 1/2 cup chicken broth
  • 1 tbsp capers

Method
 

  1. Juice the lemon, mince the garlic, and finely chop the parsley.
  2. Pound chicken breasts to an even thickness, then season with salt and pepper.
  3. Lightly coat chicken in flour and sear in olive oil until golden brown (3-5 min per side).
  4. Add butter and garlic to the skillet, sauté for 1 minute, then deglaze with chicken broth and lemon juice.
  5. Stir in capers and half the parsley, then return chicken to the skillet and simmer for 3-5 minutes.
  6. Garnish with remaining parsley before serving.
