Ingredients

  • 4 chicken thighs (boneless and skinless (1.25 lb.))
  • ¼ cup lime juice
  • 3 tbsp honey
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp dried oregano
  • ½ tsp salt

Method

  1. Preheat your grill to 375°F (190°C). Gather and prepare all ingredients.
  2. In a large ziplock bag or bowl, combine chicken thighs, lime juice, honey, vegetable oil, garlic powder, paprika, cumin, chili powder, dried oregano, and salt.
  3. Seal the bag and gently massage to ensure the thighs are evenly coated. Marinate for at least 30 minutes.
  4. Once the grill is hot, place the marinated chicken thighs directly on the grates.
  5. Grill for 6-7 minutes per side, until the internal temperature reaches 165°F (74°C).
  6. Remove chicken from the grill and let it rest for a few minutes.
  7. Serve hot, optionally sprinkled with fresh cilantro for an extra burst of freshness. Enjoy!

Notes

- For an even deeper flavor, marinate the chicken for up to 2 hours.
- Ensure your grill is clean and well-oiled to prevent sticking.
- Use a meat thermometer to guarantee the chicken is cooked to a safe internal temperature of 165°F (74°C).
- Don't skip the resting period; it allows the juices to redistribute, ensuring tender chicken.
