Ingredients
  

  • 1 lb ground chicken
  • 1 cup panko breadcrumbs (75g)
  • ½ small onion (very finely minced)
  • 1 carrot (grated)
  • 1 tbsp parsley (chopped)
  • 1 large egg
  • 1 cup small-curd cottage cheese (215g)
  • 2 tbsp ketchup (30g)
  • 1 tbsp Dijon mustard (15g)
  • 1 tbsp Worcestershire sauce (0.5 oz.)

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, add the ground chicken, panko breadcrumbs, minced onion, grated carrot, chopped parsley, egg, and cottage cheese. Gently mix with your hands until just combined.
  3. Transfer the mixture to the prepared baking sheet. Shape it into an 8x5 inch loaf.
  4. In a small bowl, stir together the ketchup, Dijon mustard, and Worcestershire sauce to create the glaze.
  5. Brush about half of the glaze evenly over the top of the meatloaf.
  6. Bake for 40 minutes. Remove from the oven and brush with the remaining glaze. Bake for another 5-10 minutes until the chicken is cooked through.

Notes

- For best results, don't overmix the meatloaf mixture; this can make it tough.
- Ensure your onion is minced very finely or even grated so it blends seamlessly.
- The internal temperature for cooked chicken should reach 165°F (74°C).
- This meatloaf freezes well. Cool completely, wrap tightly, and freeze for up to 3 months. Reheat in a 350°F (175°C) oven.
