- Preheat oven to 400ºF (200°C). Line a baking sheet with foil and place a wire rack on top.
- Lay bacon strips across the wire rack. Bake for approx. 25 minutes, or until desired crispiness.
- While bacon cooks, carefully fillet chicken breasts into two thinner cutlets.
- Season chicken cutlets with salt, black pepper, and garlic powder.
- Heat a large skillet over medium heat and add olive oil. Cook chicken cutlets for about 4 minutes per side.
- Remove cooked chicken to a clean plate and cover to keep warm. Slice tomatoes and wash lettuce leaves.
