Ingredients
  

  • nonstick cooking spray
  • 12 Hawaiian sweet rolls
  • 1 lb rotisserie chicken (shredded)
  • ¼ red onion (small dice)
  • ½ cup mayonnaise
  • 2 oz cream cheese (softened)
  • ½ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • ½ tsp garlic powder
  • 1 cup cheddar cheese (grated)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x11 inch baking dish with nonstick cooking spray.
  2. Slice the Hawaiian sweet rolls in half horizontally. Place the bottom halves into the prepared baking dish.
  3. In a medium bowl, combine the shredded rotisserie chicken, diced red onion, mayonnaise, softened cream cheese, salt, black pepper, and garlic powder.
  4. Mix all the ingredients in the bowl until well combined and creamy.
  5. Spread the chicken mixture evenly over the bottom halves of the Hawaiian rolls in the baking dish.
  6. Top the chicken mixture evenly with the grated cheddar cheese.
  7. Place the top halves of the Hawaiian rolls over the cheese.
  8. Bake for 15-20 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.
