- Prepare all your ingredients: dice the onion and celery, mince the garlic, slice the carrots, and cut the baby potatoes in half.
- In a bowl, sprinkle 2 Tbsp of all-purpose flour over the chicken pieces and toss until evenly coated.
- Heat 2 Tbsp butter and 1 Tbsp olive oil in a large pot over medium heat until shimmering.
- Add the flour-coated chicken to the pot and let it brown on all sides without stirring too much.
