  • 1 tsp paprika
  • ½ tsp dried thyme
  • ½ tsp garlic powder
  • 1 ½ tsp dried oregano, divided
  • 1 tsp salt, divided
  • ½ tsp freshly cracked black pepper, divided
  • 4 boneless, skinless chicken thighs (about 1.3 lbs.)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small yellow onion, diced

Method
 

  1. In a small bowl, combine the paprika, dried thyme, garlic powder, 1 tsp dried oregano, ¾ tsp salt, and ¼ tsp black pepper.
  2. Blot the chicken thighs dry with a paper towel, then season both sides liberally with the seasoning blend.
  3. Heat the olive oil and butter in a large deep skillet over medium heat. Once hot, add the chicken and cook for about 5 minutes per side until golden brown.
  4. Remove the chicken from the skillet and transfer to a clean plate. Cover with aluminum foil to keep warm.
  5. In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
  6. Stir in the remaining ½ tsp dried oregano, ¼ tsp salt, and ¼ tsp black pepper.
  7. Add 1.5 cups of orzo pasta to the skillet and stir to coat with the pan drippings.
  8. Pour in 2.5 cups of chicken broth and bring to a simmer.

- Don't skip drying the chicken thighs; it helps them achieve a beautiful golden-brown sear.
