Ingredients
  

  • 2 split chicken breasts (bone-in & skin-on, about 2 lbs total)
  • 3 tbsp butter (room temperature)
  • 2 garlic cloves (minced)
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary (chopped or crumbled)
  • ½ tsp salt
  • ½ tsp black pepper (freshly cracked)

Method
 

  1. Prep: Preheat oven to 275°F. Allow chicken to temper at room temp for 5-10 mins.
  2. Mix: Combine softened butter, minced garlic, dried basil, thyme, rosemary, salt, and pepper in a small bowl.
  3. Rub: Pat chicken breasts completely dry with paper towels. Generously smear the herb butter mixture over both sides of the chicken.
  4. Roast: Place chicken in a deep casserole dish. Cover tightly with foil or a lid. Bake for 90 minutes, basting once halfway through.
